Avocado Alfredo sauce

Oh my goodness! Today I wanted alfredo soooo bad! Creamy, cheesy goodness. But authentic alfredo has a butter, cheese, and heavy cream sauce. ICK! Not good for the waistline. So I came up with the recipe below. 

Not exactly like the original but it's a healthy substitute :-)

The splurge ingredient is the parmesan cheese. You want the block kind. As soon as cheese is shredded, it begins to loose it's flavor. Also, to keep cheese from clumping usually an additive is used to coat the cheese. If you have a food processor, you can easily and quickly shred the cheese yourself and use the dish washer to do the clean up. :-)

The Goods:

  • 2 avocados
  • 12 oz chicken broth
  • 2 tbs olive oil
  • 2 tbs garbanzo (chickpea) bean flour 
  • 1/3 cup flax milk
  • 2/3 cup mixed cheese of you choice
  • 1/3 parmesan cheese

Directions:

  • Blend avocados and broth in a blender
  • Heat up the olive oil and stir in the garbanzo bean flour. Cook for 2-3 min
  • Add 2/3 cup of mixed cheese and 1/3 cup flax milk
  • Fold in the avocado broth mixture
  • Fold in the parmesan cheese
  • Salt and black pepper if you desire
