Best Tomato Sauce Ever!

What's for dinner mom? Pasta you say? YES!!!

Fill your family up with this veggie packed tomato sauce. Who knew veggies could be so good and so easy to make!

The splurge ingredient is the San Marzano tomatoes. These tomatoes are grown in Italy with Italian soil and really bring a unique flavor to the dish.

The Goods:

  • 1 cup onion 
  • 1 cup celery
  • 1 cup heirloom carrots
  • 1 jalapeno optional
  • 2 bay leaves
  • 1 sprig fresh rosemary leaves
  • 4 tablespoons fresh oregano
  • 2 teaspoon salt
  • 1 tbsp coconut sugar
  • 32 ounce carton of chicken stock
  • 20 ounce can of Italian tomatoes brand San Marzano
  • 5 peppercorns + 10 + 5 allspice berries
  • 8 ounces of baby bella mushrooms
  • 2 cloves garlic
  • 1/2 teaspoon white pepper
  • 6 heirloom tomatoes

Directions:

  • Cook onions celery and carrots (mirepoix) in olive oil and salt until  caramelized
  • Add rosemary and oregano
  • Then add baby bella mushrooms, jalapeno, San Marzano tomatoes, garlic and heirloom tomatoes
  • Pour in chicken broth, white pepper, coconut sugar (to tone down the tomato acid)
  • Put the bay leaf allspice berries and peppercorns into an herb infuser or cheese cloth and place in the pot
  • Simmer on low for 30 minutes 
  • Remove the herbs and herb infuser
  • Take a stick blender and blend until smooth. If you like a chunky sauce, blend in 30-1 min intervals
