Hi Jazzy gurls! Let's talk about ice cream vs gelato.
Its all about the ice crystals! Small ice crystals which equals to a creamy texture requires 2 things: sugar and fat.
Gelato is lower in fat as advertised but higher in sugar.
Ice cream high fat (and taste ever so good!) but can contain less sugar.
Let me break it down for you:
In order for a frozen treat to be legally labeled as ice cream, it is required to have at least 10% dairy fat which usually consists of whole milk, cream and eggs. Ice cream is churned at a high speed to incorporate air thus creating a smooth and creamy texture we all know well and love. Gelato contains between 3 percent and 8 percent dairy fat if any fat at (and usually egg free) all churned much less creating a sweet dense dessert.
So choosing which evil to indulge in can be difficult.
I am working on an ice cream recipe that involves good fats while maintaining small ice crystals equalling a smooth creamy mixture.
In the meantime, you can use the chocolate smoothie recipe here and add an extra frozen banana for a healthier option. However, eat right away as it won't freeze like ice cream will.
