Roasted winter veggies

I LOVE winter veggies! What's not to love? They have massive vitamins, flavor and will fill you up with little calories compared to most winter side dishes.

The splurge ingredient are the parsnip and the turnip. The turnip adds a nice spicy aspect while the parsnip has a sweet side. Both pair nicely with the sweet potato and other veggies.

  The Goods:

  • 2 tbs fresh rosemary
  • 2 tbs fresh oregano
  • 1/4 cup olive oil
  • 2 tps salt
  • 1 squash
  • 1 zucchini
  • 2 purple potatoes
  • 1 sweet potato
  • 2 celery stalls
  • 1 parsnip
  • 1/2 cup onion
  • 1 cup carrots
  • 1 turnip

 Directions:

  • reheat oven to 450 degrees
  • wash and prep ingredients    
  • place ingredients in a baking dish and stir until olive oilt and spices are evenly coated 
  • bake for 30-45 min
