Slap Yo Mama's Meatballs!

I know this week is usually a skill blog, but who can have tomato sauce without meatballs?! I can't! So enjoy the super easy recipe below :-)

The splurge ingredient is the ground beef. Since it's only1lb that you need don't go cheap on this one. Try different kinds like: ground sirloin, grass fed, organic, or even kosher. You have my permission to go a little crazy!

The Goods:

  • 1 lbs grass fed ground beef
  • 1-2 chipotle peppers in adobo sauce
  • 1/4 cup almond flour
  • 1-2 eggs


  • Mix all ingredients together
  • Make mini meat balls about 2 tbs
  • Place in tomato sauce (see recipe here)
  • Bring sauce up to a rolling boil and cook for 15 min
  • Enjoy!
