The only Burger Patty Recipe you'll ever need!

BURGER TIME! Not king, TIME :-)

You'll go crazy over these lovely meat combinations. So grab your buns and get grillin!

The splurge ingredient for the day is your meats. Don't go cheap on this one. Grass fed or certified humane are good choices. You'll notice the better flavor and texture in your burgers

The Goods:

  • 1 lb lean meat (93% beef, ground chicken, ground turkey, lamb, wild boar but MUST BE VERY LEAN)
  • 1lb sausage (sweet Italian, chorizo, spicy pork sausage) pick your poison
  • 1/2 cup shredded cheese (My favorites are: pepper jack, sharp cheddar, feta, and swiss)
  • 1/4 cup peppers diced (jalapeno, red bell, orange bell, poblano you get the idea)


  • Pick the combo of meats and cheeses. Example: Turkey base with a sweet Italian sausage would go nicely with feta cheese and red bell peppers. You have complete control of your fat and protein quality. Another good combo I learned from Chef Kathy at Foodies Culinary Academy is lamb with chorizo and pepper jack cheese. 
  • Now combine the goodies in a bowl. Careful not to over mix and heat up the meat with your hands. Size up your bun and make the patties 25% bigger that the bun to allow for shrinkage. Layer patties with wax paper and put in the fridge for at least an hour to chill and let the flavors blend.

Chefs Corner: Since the patties are cold, the fat will hold them together on the grill as they cook. Cooking the patties right after you form them will give them more of a chance to fall apart since the fat is already warm and will render out very quickly on a hot pan or grill.
