Is the 2pm work slump getting to you? Or did you forget to pack lunch again?
This dish should cheer you right up! Packed with protein and healthy fats, this tuna snax is sure to please. And hopefully keep you away from the vending machine.
The splurge ingredient is the albacore tuna. This is a very good quality tuna that comes packed in water not oil. Is also comes out of the can in chunks not stringy mashed up pieces. I think you'll enjoy the oomph that a good quality tuna can bring to this dish.
- 1 can of good quality albacore tuna
- 1 avocado seeded and mashed
- 4 tbs red pepper diced
- 1 tbs fresh cilantro pivot chop
- 1 tbs jalapeno  diced
- 1/4 tps salt
- Wash and prep ingredients
- drain tuna
- combine all ingredients and enjoy!
Note: Go easy on the salt, your crackers will have salt on them. Also, if the salad is a little dry that is ok I'm trying to get you used to not using runny mayo. As you can see in the pic below, this is not a wet salad.
